I had a really big comfort food need this past week. I wanted chicken croquettes, spaetzle and gravy. So I made it!
You have seen my croquette recipe in the past, but here it is again if you want to look it over.
On to the spaetzle!!
Super easy egg pasta! One of my favorite quick pastas to make. Goes with just about anything else you put on your plate. They are also very filling. And yummy. And addictive. Course, I never met a carb I didn’t like.
The recipe for this is in my 40-ish year old Betty Crocker cookbook.
I suggest you first get your big pot of water on the stove and getting hot. That part takes the longest for me. The dough comes together pretty quick.
I make my dough in a really large measuring cup, as it makes it easier to pour it into the spaetzle maker. And I use a handheld mixer to do the hard work.
The recipe says to mix all the ingredients together at once, but I do whip up the milk, eggs, salt and pepper first, then add the flour. It seems to make a smoother dough for me that way. The dough is quite thick but should be pourable with some spoon help.
When you have your dough together, and your water boiling merrily away, the fun part starts. I have this really cool spaetzle maker, but you can push this thru the holes of a colander instead. I have done the colander method, but honestly, I found it to be a real pain in the butt as the steam from the water was cooking the dough before I could get it pushed thru the holes.

It’s pretty cool how this works, you put the dough in the square box and move it back and forth over the holes and it drops right into the water. The whole thing can go in the dishwasher when your done with it. Slower movement makes bigger noodlie blobs.
Watch your fingers over the water, it’s pretty easy to give yourself a steam burn.
The spaetzle only needs a few mins in the boiling water to cook, they do float when they are ready. Drain well, and add butter, sauce, gravy, pesto, or whatever you are wanting to it. I also like it with some green beans sautéed in bacon fat with some bacon bits in it
