The swapping in of bacon fat when frying onions is like aromatherapy to me, very thoughtful consideration given to the wine choice, I think those were great tweaks! Your granite counter is gorgeous, have you tried "Bar keepers Friend" on the sink? It's been around since 1882 and is amazing and really inexpensive. Glad to hear Tally is doing well!
Thank you. The kitchen smelled heavenly for sure! Still does, its lingering in the air. I wish it was granite, it's some form of plastic LOL!! I've tried comet, ajax, bar keepers, bleach, ammonia (NOT together) and dry wall sand paper. I think the only way it will be white again is to have it redone, which is not in the budget. I have had mixed results with using the rice cooker for polenta. In fact, I demoted my rice cooker to the dye-pot cabinet and now fix rice in my roaster. Your Osso Cusco looks YUM!

Thank you! Mine does fine for rice or other grains hence why I had high hopes for the polenta.
